KIKORANGI CHEESE
Kikorangi, meaning sky blue in Maori, is Kāpiti’s king of cheeses. The name ‘Kikorangi’ means ‘blue sky’ in Māori.
Kāpiti Kikorangi is an intensely decadent triple cream cheese with a buttery texture and full-flavoured, savoury taste. As it ages, the flavour continues to build up, intensifying
by the day. Kikorangi showcases a perfect balance of spicy and sweet as it rounds off a smooth creamy finish giving it an irresistible quality. For over 75 years we have been growing and cultivating the unique, high-quality strain of Eltham blue mould, refined and crafted to make this delicious and creamy cheese.
Hand crafted in Eltham, Taranaki, using artisan open vat methods. The process is almost completely hand crafted including, cutting the curd, salting and hand turning. During our process, high quality milk from pasture raised cows is poured into open vats along with freshly made starter bacteria culture, vegetarian rennet and our Eltham blue mould. When set the curd is hand cut, strained, packed into hoops and salted. Over a 6 week period, in carefully controlled conditions, the introduced bacteria is encouraged to grow and begins working, to give this cheese its award winning flavour.
Over the years our Kikorangi Blue has won many national awards in New Zealand. More recently it has been recognised in several international cheese awards in large global competitions held in the USA and Europe.
In 2018 Kikorangi Blue was highly commended, ranking 4th in the world for blue cheese. Kikorangi won the Export Champion Trophy in 2018, and is an absolute winner on any cheeseboard. Pair with Manuka honeycomb and a medium bodied Chardonnay. This triple cream blue has a smooth, golden curd and a rich, buttery texture marbled with dense blue veining.
