Savory waffles are the best! Warm, and full of flavor. Using the waffle as a base and building flavors around our Kāpiti Kikorangi Blue Cheese. Sweet, salty, savoury and creamy. Using it to make a mousse opens even more doors of possibilities.

Ingredients
Waffles:
- 2 eggs
- .550 lb plain flour
- 14 oz Anchor Milk
- 4 oz canola oil
- 1 tsp sugar
- .044 lb baking powder
- .005 lb salt
- .044 lbs dried seaweed powder
- 0.22 lb Kāpiti Kikorangi Blue Cheese Crumbled
- 1 tsp matcha green tea powder
Blue cheese Mousse
- .330 lb Kāpiti Kikorangi Blue Cheese Crumbled
- 1 tsp black truffle paste
- 1 oz Milk
- Trickle olive oil
- Cracked pepper
Method
Waffles
- Combine everything together in a bowl until well mixed
- Heat an oiled waffle iron.
- Scoop up waffle mixture and cook until golden brown
Blue cheese Mousse
- Add all ingredients together into a food processor or using a whisk and beat until smooth and fluffy
To Serve
Top the hot and crispy waffles with butter sauted wild mushrooms, spoonful of the Blue cheese mousse, caper berries, watercress and brined baby leeks.
